Most varieties of lavender typically bloom in June. If you use the lavender to distill into essential oils, then you would cut, or harvest the lavender before all the buds are open, so I typically harvest towards the end of June. We use scythes the cut the stems and then bundle them with rubber bands. The first year of harvest we did not use this dual action, but by the second year we wised up!
